Ingredients

  • 1 head romaine lettuce, washed, dried and chopped
  • 1 ripe tomato, sliced
  • 1 cup crumbled blue cheese
  • 1 cup chopped fresh basil leaves
  • Freshly ground black pepper

Dressing:

Directions

In a large bowl, arrange lettuce. Distribute tomato slices, crumbled blue cheese and chopped basil attractively over lettuce. Season with pepper.

Make the dressing: In a glass jar with a tight lid, combine lemon juice, oil, sugar, garlic, and Dijon mustard. Season with salt and pepper. Shake well and drizzle dressing over the salad just before serving.

    One of the best salads we've ever had! I substituted one tablespoon of Splenda for the 2 tbsp of sugar to cut down the calories and carbs and we couldn't even tell the difference. Also used a mix of baby spinach and baby field greens instead of romaine. I cut back the garlic to one clove instead of two, only because we had a garlic-heavy meal last night... the dressing was fantastic and I'm looking forward to using the leftovers! Great accompaniment to our grilled pork tenderloin...yum.

    I absolutely love this dressing. It is great on any salad and it has quickly become the only dressing I use anymore. I love that the ingredients are so fresh, healthy and natural- no added junk like the kind you buy in the store. I don't put any sugar in it though and it is just as good. Thanks Paula!

    i made this dressing and put it on just a regular mixed green salad and it was fantastic!! i actually used sugar substitute (Splenda because my mother is diabetic but it still turned out absolutely wonderful. probably the best dressing I've ever made!!
