    I use quinoa instead of couscous. I have several family members who are gluten intolerant. They love it. I also take the Greek flavors a step further with sliced kalamata olives...yum!

    I've been making this for years! Delicious! Tonight I tried it with red roasted pepper Quinoa/brown rice (Mideast brand instead of couscous. Added mint, dill, cilantro.
    Replaced onion with scallions. Used juice and zest of a lemon & lime.
    Yum!

    I startled my grandchild, Lily with this recipe...
    She's enjoyed my pasta salad (with wacky macmany times.
    When I made the Roasted Corn salad - she told me they normally eat their corn and salad - seperate.
    When I made the Watermelon Salad - she told me I got Orange Juice on her watermelon.
    But, Sunday when I made this salad... my husband looked at it & and said 'what's that?' Sand I answered... and they both ate it!!! Thumbs up! xoxo!

    Oh my gosh. It took this recipe for me to finally post a review after many years of trying numerous recipes online. Some recipes, over the years, were very good, some meh. However, with this recipe I just had to share my happiness! Let me start by saying that I was looking for a salad to serve on Christmas Eve. This one looked promising, but turned out to be so much more. As my husband and I tossed the freshly chopped ingredients, we were overwhelmed by a fragrance so aromatic, so fresh and inviting, it made us smile. It pleased our eyes as well - glistening with olive oil in its green and red holiday splendor! Finally, and most importantly, the taste. Heaven. So, as Christmas Eve snow falls in Denver, and I write this review, our family is unanimous in starting a new salad tradition. However, do ask us again, what we might be serving on Fourth of July. It would be dynamite to serve then, as well.

    Great, refreshing salad! I'm not a huge fan of parsley, so I didn't use it, but still the recipe is very tasty. I added a teaspoon or two of sugar to my dressing cuz I like dressings sweet and it really worked well here

    Awesome just the way it is. I've also used quinoa instead of couscous and it's still delicious! I think it's funny when people don't like a recipe yet they list all the changes they did to it. My motto is try the recipe just as it is the first time, then adjust it if I want the next time. If I don't try a recipe as is, how can I give it a fair review... anyway, I love it.

    Great salad! I used Ken's Lite Nothern Italian dressing instead of oil and limes for more flavour.

    Really enjoyed this recipe, have made it more than once and this year I brought it to our family picnic and it was a complete hit. I did tweek it a bit, using red vs vidalia onion and cilantro vs parsley, also cooking the couscous in chicken broth...definitely a recipe I have passed along multiple times!!

    Absolutely loved this recipe! For those of you who didn't like it, maybe you didn't use the best ingredients or something, who knows! Or it could just be one of those recipes that you just didn't like- those do happen!

    I was a little skeptical about the lime juice and thought it might really throw the flavors of the fresh veggies and parmesan couscous off, but it did the exact opposite. It pulled all of the flavors together and really finished the salad off well! This was the first couscous salad I've ever made and I'm looking forward to trying out some more!
