    Tracie's Couscous Salad is fantastic!!! FYI...I added an avocado, black olives and a touch of Good Seasons Salad dressing. BIG HIT!!!!!

    I absolutely love this couscous salad. It's simple, quick, and bursting with flavor. I loved the different textures of the veges. The crunch of the cucumber and the burst of the chickpeas made this so fun to eat. I will make this again and again.

    This was so easy and absolutely delicious. I added rice wine vinegar to the dressing and it was amazing. Definitely will make this again!

    I made this for a pool party along side with bbq meats and veggies. I got many compliments which I didn't expect expecially from big food critics . People were asking for second helpings and more.
    Note: I didn't have the PARMESIAN FLAVOURED couscous so I added freshly grated parmesian. THIS WILL BECOME ONE OF MY STAPLES FOR MY ALL MY FUTURE BBQ PARTIES!!!

    I love how this can be prepared in one bowl. Easy cleanup. The salad is light, flavorful, refreshing and addictive! So colorful too, perfect for picnics and potlucks. One question. My husband loathes beans of any kind, so I'm wondering: has anyone tried making this dish without the chickpeas? Can anyone provide a good substitute for them? Thanks!

    My husband and I had this as a side dish with grilled lamb chops. The next day I finished the rest. Can't wait to make it again. Used lemon instead of lime, and a little cayenne.

    We had a gyro night for dinner a few nights ago and had lots of leftovers (onion, cucumber, green pepper, tomato and feta. This was the PERFECT recipe that used up the rest of these ingredients that usually end up in a routine dinner salad! I can't believe the flavor, it's crisp, fresh and a perfect light side-dish. This will be a definate keeper, especially during the summer months as I try to find recipes for the bushels of cucumbers I grow!

    We took this to a large crowd gathering and every morsal was eaten!

    We used cilantro instead of parsley and added some lime zest. We thought these additional flavors gave it a little kick.

    This will be served at our next family event!

    I am of Middle Eastern descent, and this salad is the perfect combination of some of our favorite dishes: hummus, tabouleh, and a little something extra. The addition of the feta & cucumbers is a revelation. Even the older women in my family who are skeptical about messing with tradition adore this salad and have asked me for the recipe.
