This was a GREAT recipe -- Just made a few changes. I used whole grain roasted garlic couscous (which was great in this salad, and in the dressing I used only 1 lemon, some white vinegar (the red wine vinegar color wouldn't look good, olive oil, salt, fresh ground pepper, and some crushed oregano, which made a 'greek dressing'. It was all eaten the same day I made it!

I just made this salad today and love it. Very easy to put together. I used the Near East Parmesan couscous. I also doubled the recipe and added some chopped black olives, lots of flavor! For doubled recipe I only used 1.5 limes so just add a little lime at a time and taste it, too much can be overpowering. I also added some lime zest for color and another flavor layer - excellent! I have it chilling in the fridge now but think it would taste best at room temperature so you can really taste the feta.

I hollowed 4 lg green avacodos, diced them and added it to the salad. Take the shells slice off the bottom for a flat spot and freeze them. This sallad is way better stored overnight. Then mound it in the avacado shells that were frozen. If you dont like avacado---bell peppers halved work good, but dont freeze.

This is such a great way to incorporate lots of colorful veggies into your meal. It tastes best when you allow the flavors to sit overnight. Very Yummy.

The dish was way too bland. Definately needs some spice or something. The lime juice just wasn't cutting it.

This recipe is easy, quick and tasty. I added a little twist by including chopped black olives and everyone who tastes it loves it. Recently I couldnt get parsley so I added cilantro instead and it is even better if that is possible

I made this salad for 4th of July BBQ and everyone loved! I substituted red wine vinegar for the lime juice also since I had that. Wonderful texture and the flavors blended very well.

Oh my gosh! this is the most delicous food i have ever tasted in my life, im 16.5 years old and i am a health freak. I hope to be a nutritionist when im older and i try to get my family to eat healthy. They dont like a lot of healthy food, but i made this and they LOVED!! it. They didnt even know how healthy it was.. The only thing is, i suggest pouring (Farmer Boys greek dressing on top of it and it gives it a whole nother taste. It is amazing!!! LOVE ITTT, try it with greek dressing, it tastes soo much better!
