We found this salad to be excellent. I used regular couscous and it was still good. I only did a half cucumber and that was better than a whole. Although we enjoyed it immensely just as it was, I also think the addition of mint would be really good.

This is a wonderful recipe. You can really taste the freshness of each ingredient and my family loved it! We added cooked shrimp and made it a meal in itself.

I LOVE LOVE LOVE Paula, but I hated this salad. I think this salad would have been better without the couscous.

This recipe was outstanding. Followed recipe exactly, except used orange bell peppers instead of red bell because we had them on hand. All the flavors just meld together wonderfully. Thanks so much for offering this great recipe!

I loved this salad, it just feels like summer. I did use hominy instead of chickpeas and I also used Israeli pearl couscous to give it more texture. And it is great to take to potluck.

This is such a light and refreshing salad and makes a great side dish. The flavors of all the ingredients go so well together. (I only used juice from 1 lime. Perfect.

Made it with Hodgson Mills Whole Wheat Parmeasean Couscous. It was so good. What a great summertime recipe. Especially good for lunch
