This is a good recipe, but it has several problems. One, where do you get a boned turkey, duck or chicken? We did it ourselves, which was tricky, esp. the chicken and duck. It was also really messy to truss up and the stuffing was oozing out. Could be that it was our first time trying this procedure. Second, the cooking time is not correct. After reading the reviews and checking out the chef Paul website suggested, I started the turducken 6 hours before we wanted to eat and cooked it at 350 degrees in the roaster. After about 4 hours the internal temp. was nearing 155 degrees, so I turned it down to 225 and continued cooking for an hour, then let it rest for 1/2 hour. The bird was really messy to cut up, it didn't come out in neat slices like on t.v., but the flavor was wonderful on all the meats and the stuffing was a crowd-pleaser! Overall, this recipe won rave reviews from my family who had serious doubts about the turducken (they had never heard of such a creature before!, but should come with clearer instructions.

I sent an email questioning the roasting time and did not receive a response. Followed the recipe and at 225 for 4.5 hours it was not anywhere near done for 38 people! Especially the skin on the duck.chicken was completely raw.

Please review your recommended cook time because 3 hours at 225 degrees did not equal DONE! If it weren't for a backup turkey we had we wouldn't have had anything to eat for Thanksgiving! If you are going to provide a recipe for people to use please make sure the information is correct!

Last night I searched scores of pages about cooking times for the "Turducken"
Paula's time is much faster. I wish FoodTV would read these reviews and answer important questions. Currently I am at 125F center (chicken temp at 4 hours... I am praying the chicken temp rises soon.

On the top of the recipe it states cooking time is 5 hours, but in the instructions shows it as 3 hours 15 min. Someone please confirm correct cooking times.
