My family really liked this recipe and I'll make it again tonight. I use thick bacon to cut down on the cost and cook the bacon first. Sautee the onion and crumble the bacon and add it towards the end. Otherwise the onion burns while you're trying to crisp up the bacon. I might try adding more cream this time as the sauce is very thick, but tastes great regardless.

I hadn't had Carbonara since I was on Costa cruise lines probably 15 years ago. Of course, this version wasn't nearly as good as the Costa dish which was seasoned with sun and fun, but I think Paula's version was quite tasty and satisfying. I chose it specifically because it had cream in it (sorry, Mel which was far too little of an amount to get worked up over. I did not feel that the sauce was too thick. It was perfect with the addition of just a tad of pasta water. My very picky significant other liked it but thought that it would be better as a side dish. I felt it was perfect as the main attraction with a side salad of spring mix greens and Creamy Italian dressing. This is just one more reason for me to have the utmost confidence in Paula's recipes.

I have two toddlers and a husband. Hubby will eat anything and call it excellent but the boys are a bit pickier.
They loved this! Not a bit was left on their plates.
I thought it needed some tweeking, though. The sauce was sticky and not as creamy as I was hoping for, making the pasta bland. That is until you got a bit of bacon and then *POW*!! Flavor City.
I think next time I make it, I'll follow some of the suggestion from my fellow reviewers. Try whole eggs next time and a little extra cream, or even half and half.

I just made this for dinner and it was awesome! I did not have any cream, so I used 1/2 & 1/2 and I increased the amount for a creamier sauce. I also used less pasta, since it is only me and my husband. We still have a ton left over--yeah! He loved it too, and he can be a picky eater. Thanks Paula!

This is delicious! My whole family liked it and they are young, picky eaters. It taste like a casserole that has baked and all the flavors just gel together. Not a drop left over.

I loved this recipe and so did my fiance who is very picky. Lots of flavor and very rich. The bacon and onion were a great combination and the parm rounded out the amazing flavor. Will make again!

If you like a creamier sauce, increase the cream to 1 cup and knock the cheese down to 1/4 cup. (This really works best if you let the cream come to room temp before you begin
The flavor of the carbonara was fabulous, but it was a bit too dry for my family's taste

This was wonderful. I made the sauce up before and put it in the frig, so it was easier. Had to add more cream to thin it when I took it out but it worked fine. I would add some crushed red pepper on the top next time but I will make this again and again!! It's perfect for a small dinner party with a salad.
