    These are part of our family holiday traditions and is something we wait for each year. I have been making them for years and thought I would share what I have learned. These freeze great. Make them up, freeze them solid individually on a cookie sheet, wrap in plastic or foil and freeze. Cook from frozen being careful not to overcook as you will wind up with the filling all over the place. These make a fantastic summer meal if you can stand to turn your oven on. I will make a double batch in the cooler evening, freeze half for another day and serve the other half with a salad. You can also remove the shrimp for the best twice baked potatoes you have ever had. We have added bacon, green onions....whatever we want. One more thing...saute the shrimp in a bit of EVOO with your choice of seasonings...it really makes a nice difference.

    These were wonderful....a nice change from regular twice baked potatoes, you could really taste the shrimp. Mashing the potatoes in the mixer made them smooth and real creamy..loved them.

    I saw this recipe on Paula's Christmas Show. I made it last night for a Christmas dinner party for some friends. Boy, were they a hit. Absolutely delicious! I had sone left over. You should have seen the faces light up, when they walked out with a potato for tomorrow's lunch!

    I first made this recipe a few years ago as part of our prime rib-Christmas dinner;they were fabulous, but oh-so rich. I don't make this every year, but my husband has hinted strongly that he would like to see these again this year, so I'm looking up the recipe again. I made them exactly as Paula's recipe instructed and they came out great. Try them for true special occasion side dish that is very easy to make.

    I've been dreaming about this recipe since it aired on the Food Network last month. I'm sure I remember crispy thick cut bacon pieces sprinkled on top of the potatoes but I don't see it in the ingredients. I'm making my version with the bacon for sure. Love you Paula and Michael.
