Ingredients
- 1 cup sesame seeds
- 1 (1-pound) box light brown sugar
- 2 tablespoons butter
- 1/2 cup milk
- 1 tablespoon white vinegar
Directions
Heavily butter an 11 by 2-inch pyrex baking dish.
Wash sesame seeds and remove any debris that may be in the seeds and drain well. Heat a cast iron skillet over medium high heat until a drop of water bounces around the skillet. Pour seeds into skillet and stir constantly. Dry and parch seeds until light brown, approximately 2 minutes. Do not burn seeds.
In a heavy saucepan, combine and melt the sugar, butter, milk and vinegar. Using a wooden spoon, stir constantly until ingredients are dissolved. Cook over medium high heat to light crack stage. If using a candy thermometer, the temperature should be between 265 and 285 degrees F. Once it reaches the desired temperature, remove from heat and beat in the sesame seeds with your spoon. Pour immediately into prepared dish. Score candy while still warm and cut into squares when cool.

These sesame candies are great! And they are a hit at parties. Serving hint: place in the papers for mini cupcakes. They are super easy to make.
And they are great with espresso.

This is the best candy recipe I have ever tried! The only downfall is that they are TOTALLY addicting! I found the recipe easy to follow with awesome results.Thanks for sharing this one.

My candy didn't come out of the heavily buttered pyrex dish easily at all. In fact, I thought I was going to have to throw the whole thing away, dish and all. If I make this again, I will line the dish with buttered parchment paper and lift it out.
I watch Paula all the time and love her recipes, but I never saw the episode with this candy. So, I'm not sure if my candy turned out with the proper consistency. I used the candy thermometer and was very diligent in preparing. However, it's like a very hard peanut brittle consistency. It can be broken, but it doesn't snap easily. Somehow, since the directions said to score and cut the candy, I expected it to be softer. My candy could not be cut, it had to be broken.
The flavor is good. I like this, and may try it again. But, considering it has about $10 worth of sesame seeds, and doesn't make very much, I probably won't make it often.
