    This was a very easy recipe to make and it was a hit during Sunday football. I tweeked the recipe and added scallions and black olives. It was GREAT!!!!!

    I halved the recipe as a Sunday football snack for my bf and I and it was soooo good! It's flavor wasn't overly fishy tasting as I had feared before preparing it and the lettuce really added a freshness to the dish.

    I could not believe how good these were!
    My daughter and I actually made these right after the show we had all the ingredients handy except we only had shrimp and some leftover chicken. So I cut up the chicken and we pretended it was crab. The dish came out terriffic and talk about easy! I too used low fat versions on the dairy and didn't notice any difference. It is so decident. Who wants traditional nachos after these.

    Watched this episode and the recipe looked and sounded great. We love seafood and Mexican....yummy pairing.

    Given the fat and cholesterol content, I used reduced fat cheese for the chips. No real loss in taste. I used half & half for the seafood sauce in place of the heavy cream. The sauce did not thicken. It was not a total loss, just spooned the seafood with a small amount of 1/2 & 1/2 over the chips and finished with the remaining ingredients.

    If I followed the recipe, the dish would be a "once in a blu moon" dish for us!

    Let me start by saying the seafood nachos are very good! Secondly, Food Network neglected to post the recipe for the chewy cakes that Paula made on the episode. A few people (including myself really wanted the recipe but there is no forum on this site to ask or answer questions to either Food Network or one another. It seems to me like Holly was just doing the neighborly thing and posting the recipe to help those of us who were looking for it with no luck. They eventually posted the recipe but it took over a week for them to add it with the others from that show. I don't think there is anything wrong with 'those people' as you put it and I would like to say thanks for the recipe Holly and for helping out! Food is love so lets relax and Janice...breathe, just breathe!

    Ok, so I'm actually reviewing the Seafood Nachos from this episode! They're delicious! Extremely decadent & somewhat pricey for nachos, but worth it for a special treat. If you love seafood, try these!

    Those of you addressing Paula Dean directly should understand that the hosts do not have time to read these reviews between shows, book tours, personal appearances etc... I just baked the chewy cakes and they are excellent. They remind me of Nestle Tollhouse bar cookies, kind of like a chocolate chip cookie in a bar form. Here is the recipe:
    1lb light brown sugar
    1 stick unsalted butter (softened
    1 Tablespoon vanilla extract
    3 eggs
    2 cups self-rising flour
    1 cup semi sweet chocolate chips
    2 cups pecans roughly chopped
    1 cup sweetened coconut
    Mix the sugar, butter and vanilla with beaters. Add the eggs then the flour and beat until just combined. Stir in the chips, pecans and coconut by hand. Cook at 350 in a buttered 9X13 glass baking dish. cool on wire rack.

    I don't know why this recipe was not included in the recipe index but this is exactly how she prepared it on the show. I happened to have recorded it and was about ready to delete it when I saw the requests on here. Please make note that self-rising flour is NOT the same as all purpose flour. It already has salt and bicarbonate in it. If you are using AP flour you will need to add about a teaspoon of salt and probably 1 1/2 teaspoons of baking powder. If you want to make sure, google it and see exactly how much of each to add per cup of flour. Hope this helps everyone who wants to make them. Let us all know if you like them as much as we did. My hubby and 7 year old daughter had theirs warm with vanilla ice cream-YUM!! Happy cooking!!!!

    Thankyou for this recipe! Ireally wantd to try the Chewey Cakes too!! My family really likes all of those flavors for cookies and cakes. There wasn't any recipe for them. I hope you will post it, as we really want to try it.
