I'm not quite sure how one batch of these equal more than two servings. No one can eat just one small one (I got nine silver dollar sized pancakes from one recipe, because they are absolutely delicious! They almost had an Asian flavor like an eggroll or an egg foo young patty. I served them with a apricot/soy/ginger glazed pork loin roast and a fruit salad. Thanks for a new favorite Paula!

I just loved these pancakes. So very easy, I made a double batch thinking I'd have some leftover - not a chance, all gone in one sitting.

I found this recipe very easy to make. However, it doesn't specify what kind of oil to fry the batter in so I wasn't sure. I used vegetable oil and they did not turn out as crispy as I would have like. But they were very tasty and I would definitely make them again, but next time I'll use a different oil for frying. Any suggestions?

I can't stop making these there so good and so easy. On sunday nights I'll make a double batch (with the left over veggies for the past week and reheat them in the toaster oven for a quick breakfast for the rest of the week
