Definitely do not use Miracle Whip to substitute for the Mayonaise. I would recommend using less Mayonaise than the recipe calls for, or else it taste like blue cheese in mayonaise. If you want this recipe to be good, you shouldn't cook the vegetables at all. Serve them raw. Boiling them for a short period of time makes them somewhat flimsy, and they have that cold leftover vegetables feel to them, making them look wilted and unappetizing.
It is a good recipe, but by tweeking it a little, it is much better.

Don't blanche the red bell pepper like I did. Even 50 sec. of boiling water made them almost too floppy to eat. I would say blanche cauliflower pieces for about 20 sec, then ice water bath. The rest were fine"raw"and crunchy. Paula is the best!!!

With no tricks up my sleve, not something new, I made this dish on the holidays, too. This delicious dish is even better than fish, delicious and fast, something I made in the past. This dish is something better than stew try a bit, you'll l♥ve it to! And so when you wake up with nothing to make, not even a cake, make this and may all your Christmas dreams come true!

This recipe was easy and delicious. Be sure to refrigerate before serving and season to taste! Everyone at my Oscar party loved this and they had no idea that it was "on the lighter side"!
