    I didn't have any onions in the house, so I made it without and I even split the recipe in half and made them as mini muffins with a mexican beef stew. They were moist and delicious! I might try them with some peppers in them next time!

    My family will eat pretty much anything but they were very disappointed with this cornbread. This is one recipe that I will not attempt to make again. I thought it was very greasy and way too many onions.

    If you want a less sweet tasting muffin substitute Jiffy mix with Bob's Red Mill Cornbread Mix & Cornmeal Muffin Mix or a similar product. The lowered oven temperature is also good advise and works will in a convection oven.

    This is one of Paula Dean's great recipes. Used some tex-mex shredded cheese, made it more spicy but good. Served it with chili and everyone loved it.

    Sounds like something Paula would say doesn't it but I can't tell you how great these things are. I made them after watching the episode where Paula made them and my husband ate 3 that night and insisted they become a "staple" in the house. I told a girlfriend about it and she called to say she was trying to talk herself out of eating her 3rd muffin. You won't be disappointed.

    These were scrumptious! My husband, who doesn't normally eat many carbs, had several of these & was raving about them. I will be making these again soon! I only used half an onion, omitted the dill, reduced the cheese & butter & baked the batter in muffin tins for 20 mins.

    I like regular cornbread but this took it to another level!! My husband could not get enough of it. This was easy to make and I served this with the Chicken Florentine casserole and the dinner was a hit!

    First - the flavor was very good, but the recipe says to bake this in a baking dish, and the picture shows muffins. We went by the recipe, but nothing in the center was done - we might try it again, but would use muffin tins.
