    Hard to believe that you can improve on a good watermelon, but you can. Just had it for a 4th of July party and everyone loved it!

    This is a fabulous recipe. A real crowd pleaser here on the West Coast.
    I've served it several times for parties. It is gobbled up.

    I served the salad in individual portions. I started with a bed of butter lettuce leaves and used a combination of red and yellow watermelon dices. This was garnished with feta cheese and Maui onion rings. I served a raspberry vinaigrette on the side.

    The only limitation to this spectacular salad is the seasonal quality of the watermelon.

    Deliciously unique, refreshingly juicy, sweet melon and salty goat cheese are a creative blend, great summer salad for people with adventurously good taste!
