Ingredients
- 1-pound box elbow macaroni
- 2 tablespoons vegetable oil
- 2 cups chopped green bell pepper
- 2 cups chopped onion
- 1 tablespoon chopped garlic
- 2 pounds lean ground beef
- 3 cups canned crushed tomatoes
- Salt and pepper
- 1 teaspoon each dried basil, ground cumin, and dried oregano
- 2 to 3 cups grated Cheddar
Directions
Heat the oven to 350 degrees F.
Cook the macaroni according to package directions; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and saute until soft. Add the ground beef and saute until browned. Add the tomatoes, salt and pepper, to taste, and the basil, cumin, and oregano. In a large bowl, combine the macaroni and the beef mixture. Spread this mixture into a 9 by 13-inch baking dish. Top with the cheese and bake for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.
Cook's Note: Ground turkey or chicken can be used in place of beef, if desired.

Not only were the servings off but this was so dry. I made half the recipe and it would have served at least 8. To the leftovers of half I added one 14.5 ounce can of diced tomatoes with basil, etc. plus 8 ounces of tomato sauce. May have salvaged it but now I have to add a lot more cheese.

For some reason I was craving beef and macaroni tonight. I searched the web and found this little recipe from the Deen family. Everybody loves the Deens. And yes, at first I was scared of how unhealthy it would be but to the hell with it. It turned out really well but I did have to make some changes because it did come out a bit bland as some of the previous reviewers described. Adding more salt and pepper didn't really help either. First, I used 1 lb of ground beef and 1 lb of sweet Italian sausauge. Then I adjusted the seasonings to 1 1/2 tsp each of basil, oregano and cumin. I added 1/2 tsp chili powder (yeah the stuff you use to make chili with and 1/4 tsp smoked paprika. This kicked up the flavor and made it taste perfect. I like flavorful food from all parts of the world so this is what worked with me and my family's tastebuds. But yeah, it definitely needs a bit more spice. I'll definitely be making this again with my revisions. Good luck! And thank you Paula Deen!

Decided to make this casserole, of course I had to make it my own way. I had only two cans of diced tomatoes and a can of diced tomatoes with green peppers and onions. I cooked the noodles as directed, after completion I buttered noodles and set aside. After browning and seasoning the ground meat I added the three cans of tomatoes and let it simmer for twenty minutes. I poured half the noodle beef mixture in the dish, then added 1c of cheddar cheese and 1c of mozzarella cheese. I continued the process. That's my take on this dish, get a recipe use some steps and create your own to fulfill your taste buds.
