    Read many of the reviews and made some healthy adjustments to the recipe as well ! Used 3 cups of spelt flour, 1/4 of ground flaxseeds, 2 cups of brown sugar, 1 cup of applesauce instead of the veg. oil, 1/3 cup of almond milk instead of water and 1 & 1/2 cups of zucchini and 1 & 1/2 cups of carrots. After kinda butchering the recipe, I was absolutely amazed at how perfectly moist, sweet and delicious it came out (and much healthier to boot. I will be making this again and again. Still love you though Paula ! I Just need to add my healthy touches : and it worked out very well, crusty top and really moist and flavorful inside.

    My family absolutely LOVES this recipe - my daughters ask for it every time they come home for a visit. It's easy, the house smells WONDERFUL and I come across as a hero every time I serve it!

    One word. YUM!! I've never made zucchini bread before, but found an amazing zucchini at a local farmers market this past weekend and had to buy it. My mom used to make zucchini bread when we were kids and I loved it, but I haven't had it in years and never attempted to make it myself. This recipe reminded me of my mom's bread ... moist, flavorful, and delicious. I loved the cinnamon and nutmeg and the breads baked up to a beautiful, full loaf ... golden brown. The walnuts just made it that much better. Thank you!

    Wonderful bread! Previous recipes I've tried have turned out dry, this one was moist and had good flavor. I added another teaspoon of cinnamon and baked it for 50 minutes, it came out perfect! Will substitute applesauce for the oil and Truvia instead of the sugar next time.

    I had a complete failure with this. Followed the recipe exactly. Two regular bread pans, ran over the sides into the bottom of the oven. I'll go back to my old recipe.

    Friends, stop what you are doing and make this DELISH Zucchini Bread!
    I thought I would make it for my 18 moth old since he just loves all types of "loafs" and I'm afraid I might eat them all. SO tasty! Added perk: the cinnamon and nutmeg made the house smell even more christmasy :

    I never made zucchini bread and then I tried this recipe. It turned out really good!
    Moist and tasty, my family loved it, now my kids can have their veggies and eat too. This is a keeper. Thank you Paula
