We keep coming back to this recipe. It may not be the most healthy, but it is delicious! It is easy to make and the kitchen smells amazing!

I recently made this recipe using Bob's Red Mill All Purpose Baking Flour (Gluten Free in place of flour. I did not use any Xanthan Gum and the recipe turned out delicious. I am new to the gluten free lifestyle and will report back next year when I use Xanthan Gum.

Great recipe......My husband loved it. I did alter a bit with only 2 cups of sugar and 1 tsp of good vanilla.

I reduced the sugar to 2 cups; used coconut oil instead of veg oil.
I also used glass loaf pans, reduced heat to 325 and baked for 1 hour. They were perfect! Thank you!!!!

I took this to my nephew's as a weekend house guest. We had it for breakfast with cream cheese, fruit and coffee. It was such a hit and even my daughter, who hates zucchini, loved it. Score another one for Paula!

This is an excellent recipe. I made 1 loaf without nuts and the other with them because i have a child under 2, who is not supposed to have nuts yet. Both loaves turned out great. Even my husband loved it.
