This zucchini bread recipe is awesome! No need to change it. I didn't think it was too much sugar at all. In fact, I think it's the perfect amount to make the crunchy/chewy edges on the bread. Thank you Paula! :-

This was great. I halved the recipe to make one loaf and accidently used the entire 2 cups of zucchini! Woops! It was a tad zucchini heavy, but it still turned out absolutetly delish. I cut the sugar way back to about 3/4 a cup and also used a coconut oil and applesauce in place of the vegetable oil. It turned out very moist with a crispy edge and top. YUM. I topped the slices with some butter and then either a sprinkle of powdered sugarr or a few chocolate chips and the bread was gone in 10 minutes. A HIT!

Super moist and great flavor! Added a touch of vanilla extract. Took to work with a good stick of butter-no leftovers ;- Would be nice and easy to make as a gift also. Thank you Paula, you never fail me!!!

Made it with half whole wheat four and added orange zest. All of the sugar created a yummy caramel-ey edge. Could probably use a bit less sugar and would still be great!

I decided to make this bread since it was rainy outside, it was very easy. I tweaked the recipe. I only used 1 1/2 cups of sugar and it was MORE than enough, light olive oil instead of vegetable oil and I added organic bananas and one grated carrot for color. This was the best crunchy topped bread I have made in awhile. Just remember sometimes less is more, Paula! LOL
Loved the bread!!

I made 3 smaller loaves and put 2 in the freezer...still got eaten in less than a week! I also did half and half brown sugar and white. Delicious!

I have to admit, I love Paula but don't cook a lot of her recipes, but am so glad I tried this one! The very best zucchini bread recipe I've ever had. I did modify slightly, with using half whole wheat flour and a bit less sugar. Also whipped up a combo of Mascapone cheese with some Greek vanilla yogurt to dollop on a slice. Yum
