This yeilds alot of bread or muffins and is sooo good. It is more dense than the warm zucchini bread recipe and ooh so good when toasted!

THIS BREAD WAS WONDERFUL....I ADDED A BIT MORE CINNAMON, USED 1/2 APPLE SCE. & HALF CUP OF OIL, USED SPLENDA AS OPPOSED TO SUGAR, ADDED MORE ZUCCHINNI, ELIMINATED NUTS(SONS ARE ALLERGIC AND MADE MUFFINS SPRINKLED WITH SUGAR IN THE RAW....THE KIDS LOVED THEM!!!

This was a simple yet delicious recipe. My family raved about it, so having two loaves wasn't a problem. It would be delicious with the addition of chocolate I think. Maybe next time.

I read some of the reviews before I made this and used 1/2c. applesauce and 1/2c. oil, more zucchini (2 1/2 C and less sugar, 2 1/3c, I also added a 1/2teaspoon more of the cinnamon and nutmeg. I also used eggbeaters instead of eggs. Trying to keep it as healthy as possible without losing the flavor! I also only used a splash of water, not all of the 1/3c it calls for! It made alot of batter, I used one loaf, a muffin sheet and a 9in cake dish! The muffins cooked in 20min, the cake dish in 30min and I'm waiting on my loaf, going on 45min! The bread came out great! I'm so proud and can't wait for my man to taste! I'm usually a clutz in the kitchen, but this recipe was so easy and so YUM!

I thought this bread was just O.K. I grew up on delicious bread, and was looking for a similar recipe. It was moist, but just didn't have the right flavor to be spectacular. Guess I'll have to call mom for her recipe!
