the beauty of zucchini bread is that it isn't really a dessert or a savory, it's somewhere in between. three cups of sugar makes this so sweet that the edges are crispy and the flavor is hardy sophisticated. something like what twinkies manufacturers would make if they were making something with zucchini. yikes.

I made it with half carrot and half zucchini, and it was wonderful tasting, but there was just too much liquid- the center never dried out, even though i reduced the water by half. Oh well, I won't mind experimenting more with this yummy recipe! (I doubled all the spices too and it was fine

This is the best zucchini bread I have ever eaten. My late Aunt Ethel used to make zucchini bread and I loved it so I decided to make her recipe and Paula's. I'm so sorry Aunt Ethel, Paula's bread was better. If you haven't tried - you must - it's the best - I think it is the nutmeg.

This is a great recipe. I substituted 1/4 cup pineapple juice for the water, and cut back on the sugar by 1/2 cup. I am going to add some crushed pineapple next time! Be sure and grate the zucchini finely.
