    I followed the recipe, but changed the following after reading the reviews:

    1 1/4 tsp nutmeg
    1 1/4 tsp cinnamon
    2 1/2 c sugar
    Did not pat dry the zucchini
    (p.s. I used 4 medium-sized zucchinis to get 2 grated cups
    Baked for 55 minutes.
    Easy. Great tasting. Excellent texture. Will package up to mail to a friend.

    This was sooo moist, it is replacing my old recipe. I think Paula is the best southern cook ever.I made her drizzle sauce for apple cake and punched small holes in top of bread.BEST SAUCE I EVER MADE...TKS. PAULA.

    So easy to make. Makes great muffins too. Use cupcake liners and bake at same temp for about 25 minutes. Great for on the go eating. Excellent!

    This was a great zucchini bread recipe. Like other reviewers, I made a few changes: 1/2 c applesauce + 1/2 c oil, more zucchini (about 2 1/2 c, and only 2 1/3 c sugar. It was still plenty sweet and moist. I made mini loaves, but there was enough batter for 8 of them (not just 5 like the recipe says!

    This is my favorite zucchini bread recipe. I'va also learned that I can use pretty much any vegetable I want in this recipe and it turns out great every time. I used this recipe in my 8yr olds cooking club. They loved it!!
