    Wow...this was exactly what I was looking for. Moist and delicious. Everyone who's had it at my house loves it. I use a scant cup of oil and a tiny bit less sugar.

    Turned out better then expected as I made some changes re: less calories??? I subsituted egg beaters for the eggs.also 1/2 applesauce with half the oil and only used 2 cups of sugar(splenda,added raisens along with the nuts.Using the 2 standard loaf pans, I also made 6 standard muffins, This is a Keeper.............

    This was excellent as usual,Paula!
    I also tried something different: I cut the sugar to 2 1/2 cups;one of the cups I used brown sugar. I also added another cup of zucchini(I love zucchini. My daughter said YUCK,NO WAY until she tasted it- she LOVES IT!

    This was probably the best zucchini bread recipe I have tried, I believe, I have tried alot. It was perfectly sweet, and stayed really moist. I suggest after cooling it, wrapping it in foil and eating the next day. It tastes better the second, third, fourth, etc. day. (If you can prevent everyone from gobbling it up the first day
