Ingredients

  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped pecans
  • 1 cup semisweet chocolate chips
  • 1 tablespoon orange zest
  • Whipped cream, for serving
  • Zucchini ribbons, for serving

Directions

Preheat oven at 350 degrees F. Grease (2) 9 by 5-inch loaf pans.

Sift together flour, baking powder, salt, spices and baking soda.

In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, pecans, chocolate chips, and orange zest. Stir in sifted ingredients. Pour into prepared loaf pans.

Bake for 50 minutes, or until a skewer inserted in the middle comes out clean. Remove loaves from pans and cool. Chill before slicing. Serve with whipped cream and ribbons of zucchini.

    I liked this bread but I have a recipe for it that I like better. That is why I only rated it as good. I've found that if... you put a little flour mixed in with the chocolate chips they don't all sink to the bottom. I did have a little trouble with sticking but I had sprayed the pans really well with cooking spray and cooled them on a cooling rack and they came out with just a little effort. I didn't try to take the loaves out of the pans until they were totally cooled. They only stuck to the bottom on a small spot. I didn't put very much orange zest in it and I couldn't even taste it. I had to bake mine longer than 50 minutes also.Read more

    I LOVE PAULA!

    but, this recipe was a disappointment. I followed it to a T and all I can taste is the orange zest. It is nice and moist,... dense but, too much orange. I should have listened to that little voice that said it seemed like too much. I probably won't make this again, I have other zucchini bread/cake recipes I like better. I use Paula's recipes all the time, I absolutely love her and this is the only recipe that's ever left a 'bad taste in my mouth."Read more

    This bread is wonderful. I take it to work for breakfast every day without the wihipped cream. The chocolate chips do make it... dessert like but it makes a great snack anytime or great breakfast as I do. I use whole wheat flour and raw sugar trying to be healthy.Read more

    I made this bread just as it calls in the recipe. It baked in the allotted time. It did however stick to the pan! Not that... I mind eating the parts that stuck to the pan, but next time not only will I grease the pans, but flour or sugar them as well. Also, I did find the orange zest to add a flavor that wasn't very harmonious with the other flavors. Next time I think i will omit the orange zest. That being said, my seven year old son DEVOURED his in no time flat...of course he had no idea it was made with zucchinni!Read more

    I cant beleive this recipe received ANY negative reviews. It is hands down the best/easiest zucchini bread recipe ever. I... did not put the nuts or the nutmeg in, simply because I did not have any, but it was fabulous. So good, that I almost dont ever want to put them in because it was so wonderful the way it was! The family ate both loaves before they were even cool.Read more

    Sorry to say this recipe is a thumbs down! Too many flavors competing with each other.Also was very soggy and did not bake in... allowed time.Thought I would give it a try after reading the reviews but was very dissapointed.Read more
