    I made this into mini muffins for the "after game treat" for a group of soccer kids. They were gone in seconds! Even the parents were devouring! -I left out the chocolate chips to make them a little healthier, but I'm sure it's delicious with them too. -Well done Paula! Everything you touch turns to gold!

    I followed this as is but added white chocolate chips as well. It was fantastic and received rave reviews from all who ate it. My kids gobbled it up to. Today I'm trying it with applesauce, but really, if you want it for a treat or special occasion, just stick with the oil.
    ***round 2: 1/2 c of apple sauce 1/2 c of oil = same great results w/ 1/2 the fat!

    This is awesome! Husband says it is the best dessert he ever had! Freezes well and have made several times for friends. They all love it!

    I have made this recipe many times now without fail! Very forgiving and very flexible to changing the oil (I have used applesauce or coconut oil. Very moist and rich every time. I had to cook mine longer - not sure why. Slice and eat the first loaf and I freeze the second loaf for a treat a bit later. Thaws out perfectly like it was fresh-baked!

    I thought this was a very good recipe! I did change it a bit with great results. I added 1/2 C. applesauce and decreased the oil to 1/2 C. I might try to increase the Baking power to 1 t. next time as well to make it a little less dense. Everyone enjoyed this bread and with the less oil I didn't feel so bad making it! Thanks again Paula for the great recipes!!!

    Made it twice- once following the receipe exactly; the 2nd time I made the following changes;
    used 3 cups of grated zucchini, left our the nutmeg, doubled the amount of orange zest and added 3/4 cup of Nutella...YUM!
    Great , easy zucchini bread either way

    This recipe is perfect!! The bread is moist and tender with a crisp upper crust. The flavors work perfectly together, I didn't find the orange overwhelming at all, and my kids loved it too. I did use the mini chocolate chips so they wouldn't sink, and buttered and floured my baking pans so the bread wouldn't stick. Delicious!!

    Deliciously healthy bread!!!My husband who doesn't know how to cook made this perfectly in his first attempt without my help. Easy to make, deliciously yummy according to our 11, 9 and 4 years old children who are not vegie eater.Now, they dont know that they are.

    I just made some of the bread today cause I have a bunch of fresh zucchini and OMG it's AWESOME AND YUMMY!! I did use 1/2 cup cinnamon applesauce and 1/2 cup oil, used walnuts because I prefer them in breads over pecans, and I used mini chocolate chips and they didn't sink..... also for those of you having trouble with the bread sticking, I used the throwaway bread pans you can buy at the grocery store , I sprayed them really well with cooking spray, let them cool really well and they come right out! This recipe is a keeper!!! Thanks Paula :
