I totally LOVED this! I had to share it with my entire family and they all raved about it! Next time I'll leave out the carrots, only because I'm not a fan of cooked carrots. This is fresh and home cooking at it's best. Light enough for th summer also! Totally try it!

This recipe was excellent. My only complaint was that it doesn't tell you where to put those wonderful cooked vegetables.

If my picky husband loved this meatless lasagna, you know it was GOOD!! I was not confused at all-a very easy dish to make. I sauted the veggies in a little olive oil instead of blanching first, then threw the remainder of the sauce ingredients into the pot. First time using the no-boil noodles-Love them!! And I have been making lasagna with cottage cheese vs. ricotta for years, never thought to add some cream cheese!! I did use neufchatel to lower fat. We'll be eating this a lot this summer with all the zucchini crop! Love you Paula!

In the recipe I printed on-line, there was no mention of when to layer in the vegetables! Also, the prep time said 25 minutes, but unless you're a whiz at chopping, it may take more like 35 minutes!

I LOVE foodnetwork b/c I don't have cable but have all these great recipes to search through. I have cooked this recipe twice since I found it--1st for a group of friends who loved it and then again the other day for myself to use the extra ingredients that lay around. Here's what I'd offer in modification:
1. I sauted my veggies in a bit of olive oil b/c I didn't like the idea of boiling them.
2. I used everyone's tips to add some kick "heat" including adding a bit of CREOLE ESSENCE to the sauce that I found in another lasagna recipe.
3. I added a bit more jar pasta sauce with the basil flavor to make mine a bit more saucy.
4. I could not fit four noodles across my pan so was confused as to what to do--I would recommend to 1st timers that you be ok with BREAKING the no-bake noodles if you want the noodles to fit
5. I added extra garlic (4 cloves total as others have suggested
6. the recipe does not mention layering instructions and 1st timers might run out of space in the pan esp. if you like 'JUICY' lasagna like me so be careful to go easy with your layers. My first batch only had like 9 noodles (3 noodle layers rather than the recommended 12 b/c I didn't space it well.
7. In my 2nd go round, I halfed the recipe and used a loaf pan to make enough for lil' ole me and it worked great. I'd perfected my layering by then and fit great.

Loved the veggie lasagna, what a delicious way to a healthy dinner. What I can't believe that after all the reviews complaining about the missing instructions as to where the veggies go that Foodnetwork has not "fix" the problem by correcting the recipe.

Considering there were not many condiments/spices used, the lasagna was really good. I was amazed how good it was.
Did use a lot of pots/pans but it was worth it.
The "assembly directions" left out where you are to place the veggie layer; its not mentioned at all in the instructions. Paula where does the vegetable layer go????

Typically, my family does not care for veggies in their lasagna. We all loved this one. The smokiness of the provologne was perfect.
