I this with and without the breadcrumbs and I liked it better without the breadcrumbs. This had a wonderful flavor.

I've never heard of Gazpacho with cilantro in it. This sounds like a Mexican twist on a Spanish dish. I would leave it out for a much more authentic Gazpacho.

I haven't tried this yet but it looks much closer to a true Spanish gazpacho than most recipes I've seen. Breadcrumbs are usually added to make it have a "creamier" texture.

I've been making Gazpacho for years, but never heard of the bread crumb addition. I have a question,, why, when you make the tomato water, do you strain it? Doesn't it take the fiber out, and what harm would it do to leave it in?? I'd think with addition of the breadcrumbs you wouldn't even notice a little tomato fiber, and it would probably enhance the flavor... (?

This was really good, I used red wine vinegar instead of sherry.
