    I was expecting much more from these muffins.
    Couldn't really pick up the cheese or chili flavors. Pretty boring. Served them at a party and noticed people left bits uneaten on their plates. Won't be making them again.

    it was very plain and i also cut back on the oil to 1/4 cup. they were greasy. maybe a little sugar too. sorry.

    These corn muffins are easy to make, delicious, and go great with the Mexican casserole and wild rice salad. I've served them many times and everybody loves them. The size is great too. You can just pop them in your mouth. Ole!

    I couldn't find stone ground corn meal, so I used regular in it's place. Maybe that is where the "grit" is coming from b/c I didn't taste that at all. I do agree that they could use a little more heat and a little less oil. Otherwise, I thought they were very tasty...even ate some for breakfast.

    End produst seemed REALLY oily...batter was not thick. Also, disappointed with the blandness of them; i was expecting more kick from the Chiles.

    I love this recipe and make it at least once a month. I've made it at least five times and it's almost "fool proof." I say that because the first time I accidently LEFT OUT the oil completely and they came out fine. The next time, I put in too much corn and it also came out fine. There is something about the way the recipe instructions are written that makes it hard to follow.

    I don't have a mini muffin tin, so I make FULL SIZE muffins and cook them for 23 minutes. I'm making it tonight.
