The recipe itself is good (I've been making almost this identical thing since I discovered it in a Noho restaurant in the '80's, but the grilling is tough, for those of us, anyway, not used to grilling every day. Pairing this low-fat dish with ribs also seems counter-productive.

These were great, and I thank Paula & Bobby for reminding me we could do finish them on the grill. We paired them with the equally delicious/easy/quick Dry Rubbed Baby Back Ribs from the same episode. To speed up the potato process, just nuke the potatoes instead of an hour in the oven. We nuke potatoes all the time! We didn't use the horseradish and next time, I think we'd forego the tomatoes as well.........around here, tomatoes aren't put on skins, and I guess we prefer them that way. But, they were delicious and a great accompanyment to the ribs!

My family loves potato skins but my recipe was too complicated and took up too much time for this working mom. This recipe is so very easy. I'll microwave the potatoes before I head out to work so they are ready when I get home. I just have my husband put them on the grill before he cooks the meat and while the meat is grillling, I put on the toppings and broil them for a few minutes. All the elements of the meal are finished at the same time and my family has their favorite potato skins. Easy and Delicious!!

I liked these, but the horseradish was a bit strong for me. In fact, I'll cut the sour cream in half next time and only put in .5 TBSP of horseradish. My wife preferred hers with just sour cream.
I will make this one again!

My boyfriend and I made these as a potluck item to bring to a 4th of July party. All we can say is...WHAT A HIT! It took us a little longer to make since we have a big family and made up to 20 potatoes, and prepared all the fixins that went along with it...but it was well worth it! They were gone in a matter of minutes! You definitely will not disappoint with this recipe! Thanks Paula and Bobby!

Made these Saturday night after watching her show. It was definittely worth it! Only made one small change. My boyfriend and I don't care for fresh chopped green onions. So, to add a little extra flavor and zest. I sprinkled some fresh chopped cilantro (from my garden onto the skins with the cheese and bacon. They were incredible!!!

I ended up making this on my stove top grill. The cheese took awhile to melt. I only put cheese, sour cream and chives. I also put lots of butter, which i think that Paula would approve of. They are really good with the grilling. Great new twist to potato skins.

I love potatoe skins, BUT I have a book that said they have over 95 BAD chemicals in them. Is this true ????????????
