Ingredients

  • 3 tablespoons butter
  • 1 small yellow onion, chopped
  • 4 cups frozen shredded hash browns
  • 1 pound bulk sausage, mild, hot or sage
  • 2 1/4 cups whole milk
  • 8 large eggs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 2 tablespoons Dijon mustard
  • 8 cups cubed French or Italian bread, crusts removed
  • 2 cups (1/2 pound) grated Cheddar
  • 2 cups (1/2 pound) freshly grated Parmesan

Directions

Preheat the oven to 350 degrees F.

Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.

Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.

In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.

In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.

*Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.

Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.

    I made this last night. I followed the recipe, except used 1 1/2 lbs of bulk pork. I also used 12 eggs and 2 cups of milk. ... I let it soak all night in the frig and baked it this morning. Brought it to work for all the guys I work with. They all loved it. I think maybe soaking it all night might have helped the bread soak up all the flavors. They all said to add it to my "keep" list. I work with the type of guys that don't hold back on their comments. So, if they say to keep it, that means they want it again. Thanks Paula for another excellent dish. Read more

    I made this for breakfast this morning and was very happy with it. I did read previously posted reviews and altered as I saw... fit (and ingredients i had on hand). I used a bacon/ham combo instead of the sausage (just b/c thats what i had). I used fresh potatoes-just make sure to squeeze out moisture. I did add rosemary to the potatoe mixture based on other reviewers' suggestions of "potatoes being bland". I also added green onions with the extra cheddar cheese in the last 10 minutes of baking. My family loved it-even my 5 year old who is rather picky. This recipe is great b/c the possibilities and variations are endless! I can't wait to try with sausage next time and maybe some fresh veggies. I do think the addition of rosemary complimented the potatoes well (always a great pair!) I love the food network--but this is the first time I have tried one of Paula's recipes...I have to say she's 100% with me! Thanks!Read more

    I made this casserole for breakfast this morning and it was delicious. I did not use the exact amounts of hash browns,... french bread or cheeses. Here's what I did instead. My husband bought a french bread loaf that had to be baked. I just cut it up into bread crumbs after it cooled. I used a little less than 1 8 0z. container of Parmesan Cheese, 1 8 oz. bag of shredded sharp cheddar cheese, and I made sure I drained the sausage after it was browned.     I tried to make this recipe, and all of the comments are true. I followed the recipe to the exact instructions, and the... bread came out too crusty on top and the potatoes were bland and soggy. I threw it in the garbage and made a much easier and tastier breakfast cassarole. It was a lot of work for nothing. Dont waste your time.Read more

    I love reading people's reviews of these recipes. You can tell which people can actually read and follow a recipe. Ick -... too much cheese, No, I threw it out. Good Lord, most people can tell which ingredients they will like together before trying to make a recipe and how to adjust it to their liking before they stick it in the oven. I happened to add more cheese and no, it wasn't icky to the point weher I threw it out. It suited my taste and that's what you do when you cook. Good basic recipe Paula.     I made this recipe this morning for my family as a brunch. I have to admit, I made some alterations after looking at the... ingredients. I sauteed up one whole red onion, with some fresh green and red peppers chopped them added some garlic and spinach, I am a garlic lover and always try to fit in as many veges as I can in a meal. Then I added the hash browns to the pan and cooked pretty well. I hate potatoes that still taste hard and frozen so cooked them very well. I did the eggs, milk with salt and pepper and nutmeg together in the bowl then whisked together and added the cheese. In a separate pan browned up some chopped bacon and pork sausage. I added the meat to the pan with the potato mixture. I omitted the bread altogether and then sprayed the large baking dish with cooking spray, added my potato mixture and then over the top added the egg and cheese mixture. Baked in the oven as directed, Oh I did use 10 eggs and skim milk. My whole family just loved it, from my 8 year old kind of picky eater and my 12 year old who hates eggs, my 16 year old said his new favorite and of course the hubby. I also though what a perfect brunch on Sunday and then left overs are great and very hearty for the kids to heat up on a school day. Love love love it....Thanks PaulaRead more
