Love, love this recipe. It's quick and easy to make. Very flavorful, yummy, everyone of my friends and family has loved also. In-fact I was asked to make it at our women's tea this weekend!

Great for a crowd. After reading the reviews stating it was plain or bland, I adjusted the recipe slightly.
a. Browned 6 strips of bacon, drained and ruff chopped.
b. Saute onion in reserved bacon drippings, when done add the chopped bacon.
c. Sprinkled Morton's Natures Seasons blend & 2Tlbs fresh chopped basil over hash browns & onions, and saute........ OMIT ADDITIONAL SALT & PEPPER.
d. Served casserole with Sour Cream and side of fresh fruit. YUM, YUM, YUM

I have made this for brunch twice, and everyone asked for seconds each time. The first time I followed the directions exactly. The second time, I used 1% milk, and since I didn't have any Italian bread, I spread a layer of croutons instead, which worked out great (and was easier than cubing a loaf of bread. For the reviewers that didn't like this recipe, I'm not sure how you can mess it up unless you don't follow directions (and I know a few people that just can't cook, so that is probably the case.

I've made many of Paula's recipes, but this one wasn't one of my favorites.... Although there somes to be quite a bit of seasonings, it lack seasoning... Definitely brown the hashbrowns and add more seasonings and dijon, because you can't taste it.... WHATEVER you do wait until the end to add any and all cheeses!!! If not the cheese that is placed on in the beginning will be hard as a rock!!!!

I am a true fan of Paula Dean and love most of her recipes, but this recipes lacks flavor and the texture was not pleasing at all. This dish is more like a keesh in my opinion and not a casserole. If you like keesh dishes than this is for you. I would reccommend adding more seasoning to the dish.

There is too much sodium in this recipe!It just doesn't appeal to me.
