This was really good. My family loved it too. (3 kids We have chickens and have sooo many eggs that I was looking for some way to use them up. This did the trick and tasted good too.

I personally was disappointed with this recipe. I followed it exactly and found it lacked flavor. I couldn't taste the Dijon or nutmeg at all and wished I had cooked the potatoes longer so they were brown. I did think it was moist and has potential, but I'll have to play around with it a bit.

I agree with those who state the bread is too much- I cut it in half and this recipe was amazing for my "breakfast dinner party!" We enjoyed the tang with the mustard, tho I changed the sausage to turkey sausage without noticing a bit of difference the second time around. Very homey and comforting! Next time I'm going to try adding onions and peppers for some extra zing.

This is a GREAT recipe! I only rated it a 4 because I changed some things: 1. used ground dry mustard vs. dijon for less tang; 2. omitted the nutmeg; 3. fried up some diced bacon vs. sausage; 4. used butter flavored cooking spray vs. veg oil; 5. cooked hash browns first according to package directions but not all the way done, then pressed them into the bottom of my casserole dish to form a "crust"; 6. added some sauteed red, yellow & green peppers to the hash browns; 7. used all cheddar and no parmesan; 8. omitted bread for more "egg-i-ness." Turned out GREAT, and pretty too!

The consistency was great but the Dijon mustard and nutmeg over powered the dish. My kids wouldn't eat it. :( Might try again with out using these 2 ingredients.

My family didn't much care for this recipe. You couldn't taste the hash browns on the bottom and the custard got absorbed by the bread so it was like eating soggy bread. Not much flavor except for the cheese. Everyone put hot sauce on it to add flavor.

I got up this morning early and fixed this casserole exactly as written, except for the nutmeg. Took it to my daughter's house and put it in the oven. It was DELICIOUS!! Everyone raved and had second helpings! I can't tell you what a hit it was with the mimosas. I'll certainly make this again and again for a breakfast or brunch. Thanx, Paula for another great recipe.
