Ingredients

  • 2 teaspoons ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 teaspoons dried thyme
  • 1 teaspoon ground ginger
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons ground black pepper
  • 2 tablespoons vegetable oil
  • 2 cups chopped onions
  • 5 cloves garlic
  • 2 habanero peppers
  • 1 (5-pound) chicken, skin on, cut into 10 pieces
  • 1 cup lime juice

Directions

Combine all ingredients except the chicken and lime juice in a food processor and puree until pretty smooth. Place the chicken and lime juice in a mixing bowl and pour about half of the jerk sauce over it, tossing the chicken around to coat it well. Place in a container and pour the remaining sauce on top of chicken. Cover and refrigerate for at least 4 hours or overnight.

Preheat oven to 350 degrees F.

Remove the chicken pieces from the jerk marinade and place them, skin side up, on a rimmed baking sheet or dish. Bake in the oven for 45 to 55 minutes until cooked through and the juices run clear when pierced with a fork.

Good Recipe we are gonna tweak it though

So I made this recipe just as it was written my family liked it however I believe recipes are like painting with numbers,... great guideline but no need to ALWAYS follow it exactly. The next time I make this I will use 1/2 cup lime juice and 1/2 cup of orange juice. I will also sprinkle the chicken breasts (I use boneless skinless) with garlic powder and salt just before grilling. All in all this was a good recipe thanks Paula Deen!Read more

You don't have to wait! It is great!

I needed to make this quickly. I mixed in two jalap. peppers instead of hab. peppers and apple pie spice instead of all... spice (because the apple pie spice has some all spice and nutmeg). I put it in the fridge while I made the key lime pie and then realized that I forgot the oil and lime juice to marinade the chicken. So I pulled it out and put the lime juice over it and some oil. Result - just right! I probably had it in the marinade for only 1 hour and it still came out great. My guests liked it and so did the hubby.Read more

    try it this way

True Jerk from Jamaica uses Scotch Bonnet peppers. less heat than Habanero and much more flavor. They are shaped like little... hats. They are hot so be aware. Also jerk is best grilled with a smoky BBQ for the flavor.Read more

    Perfect flavor!

I myself am vegan so I didn't sample any of the chicken, but I made it for my husband and daughter and they both LOVED it. I... did alter the recipe a bit though. I made only 1/4 of the marinade, as I was cooking much less chicken. I omitted the nutmeg, and substituted white sugar for brown sugar, I didn't have either of the listed ingredients. Also I used half of 1 jalapeno pepper, my daughter doesn't like spicy food. My husband said that all of the flavors melded together very well, and my very picky daughter said it was great. I served it with white rice and peas. I will definitely make this again! Read more
