I needed to make this quickly. I mixed in two jalap. peppers instead of hab. peppers and apple pie spice instead of all spice (because the apple pie spice has some all spice and nutmeg. I put it in the fridge while I made the key lime pie and then realized that I forgot the oil and lime juice to marinade the chicken. So I pulled it out and put the lime juice over it and some oil. Result - just right! I probably had it in the marinade for only 1 hour and it still came out great. My guests liked it and so did the hubby.

True Jerk from Jamaica uses Scotch Bonnet peppers. less heat than Habanero and much more flavor. They are shaped like little hats. They are hot so be aware. Also jerk is best grilled with a smoky BBQ for the flavor.

I myself am vegan so I didn't sample any of the chicken, but I made it for my husband and daughter and they both LOVED it. I did alter the recipe a bit though. I made only 1/4 of the marinade, as I was cooking much less chicken. I omitted the nutmeg, and substituted white sugar for brown sugar, I didn't have either of the listed ingredients. Also I used half of 1 jalapeno pepper, my daughter doesn't like spicy food. My husband said that all of the flavors melded together very well, and my very picky daughter said it was great. I served it with white rice and peas. I will definitely make this again!

This was way too hot without much flavor other than the citrus. We normally like spicy foods, but we couldn't eat it. It didn't look anything like the picture.

I got this recipe not knowing if i should make it with all the garlic and onion. I marinated it for 36 hrs. grilled it.....It was great. So good my father-in-law wanted me to make it again the next day.

I'm not a fan of this recipe. The allspice was overwhelming, and 2 habaneros left my taste buds numb. After getting through all that, there just wasn't any flavor to the chicken. I let it marinate overnight, but, other than the heat, it was pretty bland. Easy to prepare, but not good enough to make again.

I always read the reviews before trying a new recipe, and I was surprised at how many people didn't like this. I tried it anyway and loved it. I marinated overnight using 3 habanero's and there was great heat and flavor. Will make again.
