Ingredients

  • 1 pint heavy whipping cream
  • 1/4 cup confectioners' sugar
  • 1 pound mascarpone cheese, at room temperature
  • 3 (3-ounce) packages unfilled ladyfingers
  • 1 (6-ounce) can frozen limeade concentrate, thawed
  • 1 (21-ounce) can blueberry pie filling
  • Fresh mint leaves, optional

Directions

In a large bowl, beat cream with an electric mixer at medium speed until thickened. Gradually add confectioners' sugar, beating until soft peaks form. Gently stir in cheese until combined; set aside.

Split ladyfingers in half. Line a 13 by 9 by 2-inch baking dish with ladyfingers, cut side up. Brush ladyfingers with limeade concentrate. Spoon half of cheese mixture over ladyfingers. Top with half of blueberry pie filling. Repeat procedure for the next layer with remaining ladyfingers, limeade, cheese mixture, and pie filling. Cover and chill 8 hours. Cut into squares to serve. Garnish with fresh mint, if desired.

    Expensive and average 4th of July dessert

    This recipe does make a huge pan, but the ingredients ran about $30 for a dessert nobody was overly impressed with. ... Sweetness seems to be the primary problem. It's overwhelming. I used a second can of pie fillig like many suggested and think it would have been better to just spread one can out. I'm contemplating making a half recipe and trying it with lightly sweetend fresh blueberries. Trying the cream cheese substitute for the ricotta would have significantly reduced the cost. I enjoyed the texture, and the novelty, so am intrigued to play with the recipe. I think using sliced strawberries could also be a hit.Read more

    I'm glad I read the reviews before making and saved myself some money. I used a frozen pound cake because I couldn't find... the ladyfingers. Worked great! I also used cream cheese for half of the mascarpone. It was extremely rich and delicious. It didn't taste very lime-y to me and one can of pie filling worked for me. I also didn't fuss with changing the sugar. I got so much better and moister the longer it sat. I think I still like the espresso version better but then I'm a coffee freak! But, still all-in-all a very refreshing summer dessert!Read more
