Super tasty and so easy. Another light and delicious recipe. I just left out the feta and butter in the couscous and it was still yummy.

This is my all time favorite salmon dinner recipes. I have made it with chicken flavored couscous but the last time I used Parmesan flavored couscous and I will stay with that flavor. I always cook the couscous in homemade chicken stock or at the least store bought, never water. I stir in the feta, tomatoes, and green onions then when I plate it I garnish lightly with more feta, tomatoes, and green onions. It is delicious and impressively beautiful. I also just bake the salmon and top a green salad then lunch off the salmon on saltines and lemon juice during the week. We love it.

I was searching for a cous cous recipe and this is THE ONE! I used vegetable broth for the resident vegetarian and the whole family loved it! My niece said she'd like it every day. It will be a great main dish with some crusty bread in the warmer weather. Definitely a keeper! Thanks, Bobby!
