Like Bobby mentioned, you don't want to override the taste of salmon and this was so refreshing and light. I've been told several times that ppl will often hide a less than fresh fish with a gloppy sauce. And the couscous...I always have it on hand because it's so versatile...you can do anything with it. Great meal!!!!

This salmon is really good. I added crumbled goat cheese to my cous cous and it was great. The stock ratio is off a little my cous cous was a little to wet. Overall a great healthy dish.

I used cod because I already had some and added some minced garlic to the broth. The feta tasted great melted into the couscous. I took the leftovers to work for lunch the next day.

This was awesome! So easy and tasted so good. Nice to know also that it was healthy. On a personal note:I don't really understand why people complain CONSTANTLY about dishes not having enough taste or flavor. I think their taste buds have been burned out by the salt in fast food. Obviously something is wrong there.
    Anyway, great dish!

I had unexpected guests over the weekend, and so we had Bobby's salmon. I had time to spend with my guests, and everyone loved the food, and wanted the recipe. Way to go Bobby!

This was great! I put more lime on the salmon when it was done cooking, which gave it a nice fresh taste. I also added to limes juiced to the couscous. This was a nice change from grilling salmon. It also is very Weight Watchers friendly. Will make it again

first in regards to the couscous recipe, it was very very good! I thought the feta would be to strong for the dish but it was great! I unfortunately forgot the scallions but added in thin little slices of onion and added parsley for color and it was delicious! The salmon was simple and tasty. Great light meal!
