Make this recently. Didn't realize it was several steps but it turned out like WOW! The lightest fluffiest cheesecake ever and the chocolate sauce, perfect. Not too sweet. Thanks Paula, that's a keeper!!!

my first attempt also at usiing a spring form pan... what a pain to get outta the pan once cooled; no where did I see when to remove and if to grease the pan but will do so next time. And remove prior to putting in fridge. Taste was more like a custard than a cheese cake... will keep looking for a better recipe.

I LOVE this recipe. It is simple, delicious, and a family favorite. I made this on a Sunday night and I had about two bites, and an hour later it was completely gone. Next time I'm making two . . . . :

My neighbor Joe is FROM New York and this recipe is a good place to start, but as mentioned by other reader's, it is not a very 'deep' cheesecake. Joe's recipe is just like this but uses 5 (five! pkgs. 8 oz cream cheese, add 3 Tbsp. flour and 1 cup sour cream. All other ingredients remain the same, blending in the eggs last. Another good tip is to bake the cheesecake on the middle rack of the oven with baking/casserole dish 1/2 - 2/3 filled with water on the bottom rack to keep things nice and moist and minimal surface cracking. This amount of cream cheese will take 1 hour 5 min. baking time--and it's imperative you do not open the oven door and peek!

Hello everyone my name is Yvette and I made Paula's deen cheesecake for the first time and my middle did not come out right. I used all the right stuff I was suppose to put in it measuring was correct. I cooked it for an hour was that to long maybe that is why the middle did not come out right. Can someone tell me why the middle of my cheesecake did not come out to wet in the middle please.
Thank you,
