    We liked the grilled cheese but thought it needed a little bit extra. So I added cilantro to the salsa, then used tortillas instead of bread and made a quesadilla out of it. Also, added shredded chicken seasoned with caribbean jerk seasoning to the quesadilla. I served it with sour cream and it was wonderful! Not so much a grilled cheese anymore, but still good!

    Let's just say the result of this recipe is an unusual, or challenging combination of tastes. Now, use Goat Cheese instead of Swiss and the flavors magically come together the way they should. Putting a little jalapeno into the salsa would give it a special kick as well.

    We saw this and had to try it. It was an excellent sandwich! The flavors all come together very well. My husband and I loved the curry butter and the mango makes it so refreshing, perfect for the summer. It was easy to make and SO flavorful! We see why it's a grilled cheese award winner.

    We used only half the amount of curry and the sandwiches were perfect. We would cut up some more of the salsa ingredients to have some leftover to serve on side.
