You can create up to five timers

Ingredients

  • 1 pound strawberries, hulled and sliced
  • 3 tablespoons amaretto or orange liqueur
  • 2/3 cup heavy cream
  • 1/3 cup confectioners' sugar
  • 1 cup ricotta cheese
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted pistachios, chopped, optional
  • 24 amaretti cookies, crushed
  • Miniature semisweet chocolate chips, optional

Directions

In a medium bowl, combine the strawberries and amaretto. Cover and refrigerate at least 3 hours or overnight.

In a large bowl, whip the cream with the confectioners' sugar until soft peaks form (tips curl). In a medium bowl, stir half of the whipped cream into the ricotta to lighten it. Gently fold in the remaining whipped cream and cinnamon. Fold the pistachios into cream mixture.

Place a layer of crushed amaretti cookies in each of 4 parfait glasses. Top each with a layer of strawberry slices and then cannoli cream. Repeat layering. If desired, top with miniature chocolate chips.

    Awesome!!! Easy to make and always makes a great impression with guests. I have used any crunchy cookie and often leave out the pistachios. Still great!

    This is extremely easy and quick to make and looks very impressive. I mascerated the strawberries just for an hour with Grand Marnier as I did not really want the alcohol taste. If you make ahead by a couple of hours like I did, the amaretti crumbs will soften, more tiramisu like so if you want the crunch you should not assemble it too far ahead. I will definitely make again but maybe with cream cheese and cream or mascarpone and cream...the Ricotta was a bit bland for me.

    found the amaretti cookies ar world market...made by Vicenzi, amaretto d'italia amaretti cookie. buy 2 packs because you'll eat half a pack while making the parfaits! haha these are soooooooo good! this was the hit dessert at our party. elegant looking in the tall glass parfait glasses. i loved all the compliments! i finally broke down and gave away the recipe and the fact that i got it from paula! heehee
