Ingredients

  • 1 pound strawberries, hulled and sliced
  • 3 tablespoons amaretto or orange liqueur
  • 2/3 cup heavy cream
  • 1/3 cup confectioners' sugar
  • 1 cup ricotta cheese
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted pistachios, chopped, optional
  • 24 amaretti cookies, crushed
  • Miniature semisweet chocolate chips, optional

Directions

In a medium bowl, combine the strawberries and amaretto. Cover and refrigerate at least 3 hours or overnight.

In a large bowl, whip the cream with the confectioners' sugar until soft peaks form (tips curl). In a medium bowl, stir half of the whipped cream into the ricotta to lighten it. Gently fold in the remaining whipped cream and cinnamon. Fold the pistachios into cream mixture.

Place a layer of crushed amaretti cookies in each of 4 parfait glasses. Top each with a layer of strawberry slices and then cannoli cream. Repeat layering. If desired, top with miniature chocolate chips.

    Looks stunning

This is extremely easy and quick to make and looks very impressive. I mascerated the strawberries just for an hour with... Grand Marnier as I did not really want the alcohol taste. If you make ahead by a couple of hours like I did, the amaretti crumbs will soften, more tiramisu like so if you want the crunch you should not assemble it too far ahead. I will definitely make again but maybe with cream cheese and cream or mascarpone and cream...the Ricotta was a bit bland for me.Read more

    BIG HIT!!!

I made this for desert the same night we had Lobster Pot Pie - this was a perfect ending! I had to shell pistachios myself... as I couldn't find unsalted. Use almond cookies which can be found in a regular grocery store. This recipe really serves 6 easily. A great make-a-head when you are entertaining and a lovely presentation. I'm not usually successful as making deserts, so this is definitely a keeper!Read more

    Parfaits

These were quick and easy. I skipped the amaretto because I didn't have any- just mascerated the berries with a bit of sugar.... Also couldn't find the amaretti cookies but substituted ginger snaps for crunch. I have seen these cookies in a gourmet grocery store in my area or you might have luck at an Italian market if you have one nearby.Read more

Delicious! I used whipped topping instead of the cream to make it quicker. Tons of flavors going on-so it kept my guests... guessing! The cinnamon was great in the whipped topping. EASY!Read more
