Very light, yet crunchy on the outside and moist on the inside. Not my favorite, because nothing is as good as using real sugar, but will do on the buffet for a lighter fare.

The texture of this cookie is wonderful. Crisp on the edges, soft in the middle. I substituted margarine for unsalted butter, so mine were a little saltier than normal. Will add to my recipe collectionf or sure!

Next time I'll try substituting one tsp of baking soda with 1 tsp of baking powder, and omitting the salt.
And they seemed to spread out very much on the baking sheet, so place them very far apart!
But they were absolutely delicious, yum yum!

this is easy to make and fun for the kids to roll and smash, but i did make one change i put sugar on the top of them and my kids thought that was neat.
