Ingredients

  • 2 cups sugar
  • 2 cups brown sugar
  • 1 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 1/3 cups milk
  • 1/4 cup butter
  • 3/4 cup peanut butter
  • 2 teaspoons vanilla

Directions

In a saucepan, stir together the sugars, salt, cocoa powder, milk, and heat until sugar is dissolved. Add the butter and cook to 238 degrees F on a candy thermometer.

Pour out of the pan into a mixing bowl to cool slightly and with a paddle attachment, stir in the peanut butter and vanilla. Continue beating to cool and stiffen the fudge until it starts to lighten and looses its gloss. Pour it into a greased pan and let it cool completely before cutting into 1 1/2-inch squares.

It was one of the best peanut butter fudge recipes I've had and my husband who is not really a fudge eater loved it! I found it easy to make and thought it tasted even better after letting it sit for 24 hours in the refrigerator.

This was my first time making fudge, and it got pretty rave reviews. It was also easy to make, especially with the paddle attachment on the mixer. Side note: it did take a long time for the fudge to reach 238 degrees ---- the mixture hovered at 230 for around 12 minutes before it slowly edged its way to the next notch on the thermometer. Being a first time fudge maker, this part scared me just a bit. My one issue with this fudge is that I can taste the molasses in it (accounting for the 2 cups of brown sugar. I have deep taste buds, so nobody else in my family could detect that particular aftertaste, but I thought it was worth mentioning. Otherwise, I really liked the dreamy taste with just a hint of PB and the melt-in-my-mouth consistency of this fudge. I will make it again.
