These are the best shortbread cookies I have made. They turn out perfectly every time. I am thinking of using this recipe for a tart crust; has anyone tried that yet? My only concern is that it might be too crumbly to cut pretty tart slices. Any suggestions would be greatly appreciated.
If the crust turns out well, I plan to fill it with Ina's lemon curd and top with fresh berries and chocolate curls.

I L-O-V-E to bake cookies and I like shortbread cookies, but I hate to roll with a rolling pin...it's one of my pet peeve...I'm not so good with it as it comes out hard like rock and tasteless. So, what I did is roll the dough into 1-inch ball and flatten it w/my fingers, and baked it for 18-20 min. So easy. Don't know if there's any difference in taste and texture but mine came out light and fluffy, and it melts in my mouth. I like the smell of almond extract but I don't know about the taste...maybe next time I'll use 2 tsp of vanilla extract instead of 1 tsp each of the vanilla and almond extracts. Oh yeah, and I didn't refrigerate...what for? The dough still holds together... Thanks for the recipe Ina. I enjoy watching your show but never have the courage to make any of them...

This is the best shortbread recipe. The cookies were so delicious and very easy to make. I always change recipes once I've tried them but this recipe needs nothing more. My husband devoured the batch in two days. I'm adding this recipe to my Christmas cookie collection.
Thanks Ina for a most delicious cookie.

These were very simple to make and tasted so good. It is odd to see the butter measured by the pound instead of sticks or cups. Be sure to use 3 sticks of butter....that equals 3/4 pound.

I love Ina have made many of her dishes and really enjoy watching her. Why why was my dough so crumbly??? followed rec exactly but used hand mixer. please help?? thank you.

These cookies were yummy! I'm new to making cookies, so I didn't get them mixed quite enough. Had to add some milk, but once I started squeezing the dough by hand to re-wrap and re-chill, it was great! Perfect dough. Tried to use intricate cookie cutters...ugg. Once I changed to the biscuit cutter, easy. I gave them to neighbors, and the loved them! Another fine job Miss Ina :

These are the best!! Buttery and flaky. I added toffee bits last year and it was even better. These have become a new traditional Christmas cookie.

Beautiful, moist, and delicious. Kids absolutely adored them. i cant wait to make them again.
