    These cookies have always been a hit when i make them. Instead of refrigerating the chocolate, i simply dip the top of the cookies in the melted chocolate and then put them together. Then i sprinkle crushed candy canes on top. It saves time by not having to wait for the chocolate to stiffen up and the cookies stick together just fine. They really are delicious if you are a fan of minty things. If not, def skip this recipe because you can really taste the peppermint.

    Giada, I know this may sound strange, but you have created such a great cookie that I have to buy enough of the ingredients to feed a small army; and that's just my family, let alone my coworkers. But, the good thing is, I get all I want while I'm cooking all day!

    This is by far my husband's and my favorite Christmas cookie. This year, I'm making either a triple or quadruple batch, just because they disappear so fast! Super, super yummy!

    I made these for Christmas last year for the family get together and they got mixed reveiws. I probably will not make them again because it was a little bit of a process to make them and they weren't the greatest hit. If you really really love mint desserts then you will probably love these, I just didn't think that were anything to get excited about. So maybe just more of a personal preference?

    I love the minty flavor! They are so festive looking. I found some small natural peppermint candies at Whole Foods and cut them in half so that I'd have red and white showing on all my pieces - none just white. Yeah, a little anal but it looked cool. Made these and a few other Giada recipes (hazelnut crunch, lemon ricotta and chocolate pine nut my cookies were devoured quickly.
    (There are plenty of sugar cookie recipes should anyone want to go from scatch all the way.

    I did a couple of things different-I used a family sugar cookie recipe (with vanilla, lemon and almond extracts and refrigerated it in rolls that were about 2 inches in diameter. That was day one. On Day two, I sliced the rolls thinly and baked them. On day three, I did the filling and topping. I make the sugar cookie recipe for Christmas cookies that we put sprinkles on, so I had plenty made. I took these to a cookie exchange and they were very popular. I only ate one (trying to lose weight but it was nice and minty. Yum!

    I spent a couple hours on these cookies. You have to keep coming back to them after refrigerating the chocolate for an hour, then freezing the cookies for 30 minutes, and so on. It was a lot of steps and not a lot of taste.
