I made these cookies for Christmas and I will probably make them again for Valentine's Day. Everyone loved them. I used the sugar cookie dough that is already cut (break and bake to make this even easier. I used 1/2 milk chocolate chips and 1/2 semi-sweet chips. I actually doubled the amount of chocolated called for in the recipe. Otherwise, I followed the directions exactly and they turned out great!

This cookie has a very pretty look, is tasty and was easy to make. You do need some time because of the need to allow things to set, but it was quite easy.

The recipe asks for rolls of pre-made cookie dough. Big deal. She only put it there so it would be convenient for beginners. Also who would would to slave away at the kitchen making cookies all day when you can just spend the holidays with your family? These cookies took enough time as it is because you basically had to cut out double the amount of cookies since they would be sandwiched. These were great. Since they can be really rich I made 1 1/2 inch cookies. Just the right amount of minty chocolate.

These came out wonderfully! I used a smaller cookie cutter in order to get more cookies out of it. (I ended up with about 24 I'm putting them with some other cookies in a cute tin I'm giving to my relatives on Christmas. They can be time consuming with all of the cooling and setting, but they are very easy to make. I'm home, so I had time to wait for them! Well worth the wait!

I used this recipe as apart of my holiday basket for my husbands employees. They loved them, We had one employee tell us that he was going to save one for his family but liked it so much he ended up eating it. Next year the only thing I would change is making them smaller. Great job Giada!

I thought, the fact that these used pre-made dough, was ingenious. It really saved much time and stress this holiday season. When you work a full-time job and have many to make treats for, short-cuts are most welcome! Anyway, these turned out to be so... cute! I made them small and sprinkled some small peppermint candies on top. The peppermint in the chocolate was very subtle but refreshing. Overall, I would definitely keep these in the repertoire for the holiday season!

These cookies are amazing. They turned out perfect and the peppermint, sugar, and chocolate just make the cookie of Christmas.

I would say that this is a wonderful cookie, except that the filling is a little to sweet. I added just a little less filling to suit my taste more. Also, for a party I would say to make the cookies a bit smaller. I would also suggest putting the cookies in the freezer instead of the fridge; cuts the waiting time in half. Very very good though.
