How to Enhance Girl Scout Cookies with Ice Cream

The only thing better than cookies and milk is cookies and ice cream. Now that Girl Scout cookie season is upon us, use your favorites to make a variety of frosty treats: ice cream sandwiches, ice cream pie, milkshakes and even homemade cookie ice cream. Here's how it's done:

Do-Si-Do Ice Cream Sandwiches

These peanut-buttery ice cream sandwiches couldn't be easier: Simply spoon peanut butter cookie ice cream between two Do-si-do cookies, smooth the edges, and enjoy!

Homemade Tagalong Ice Cream

Prepare a batch of classic vanilla ice cream from scratch, and add a package of chopped Tagalongs to the ice cream in the last 5 minutes of churning.

Scoop some of the ice cream into a freezer-safe container, and drizzle on some peanut butter and chocolate fudge swirls before topping with more ice cream. Repeat with the peanut butter and chocolate fudge so you have peanut butter and chocolate fudge ripples within the ice cream when you scoop.

Top with the last of the ice cream, add some whole cookies to the top and place in the freezer for 4 to 6 hours to harden.

Thin Mint Ice Cream Pie

Prepare a Thin Mint crust by crushing the cookies and adding butter. Press the crumbs into the bottom of a pie tin and bake at 350 degrees F for about 12 to 15 minutes, or until firm.

Once the crust is cool, add a layer of mint ice cream (mint cookie ice cream is killer too) before topping with whipped cream, mint candies and curls of creme de menthe candies.

Samoa Milkshake

Start by coating the tops of your milkshake glasses with chocolate frosting and adding bits of broken Samoa cookies.

Next, make your milkshake by blending vanilla ice cream, milk and caramel sauce. Before pouring the milkshake, drizzle the insides of the glasses with caramel sauce and chocolate sauce.

Top the milkshake with whipped cream, toasted coconut and a straw ringed with more Samoa cookies. Drizzle your creation with more chocolate sauce for good measure.
