Ingredients

  • 2 globe eggplants, quartered
  • Olive oil, for drizzling
  • 3 cloves garlic
  • 1/2 bunch cilantro
  • 1/2 cup olive oil
  • Salt

Directions

Drizzle the eggplant quarters with olive oil and roast in a preheated 350 degree oven for 30 minutes. Let cool to room temperature and then remove the skin. Put eggplant into food processor with the garlic and cilantro and pulse to puree. Add olive oil and puree until smooth. Season with salt.

    This simply isn't eggplant caviar, a much more complex recipe containing finely chopped eggplant, black olives, celery, onions, garlic, and containing tomato paste

    This recipe was incredibly easy and the end product was absolutely delicious. We added a dash or two of cayenne pepper to give it a little kick. We spread it on grilled garlic bread (recipe also found on Foodnetwork.com and topped with shredded parmesan cheese. The perfect party bite!
