I made this for a friend's birthday and it got great reviews. I made a 9" layer cake rather than cupcakes; baked for 38 minutes. I found it to be a smidge dry - not sure if I should have taken it out of the oven a minute earlier (I checked the pans at 35 minutes and they weren't done or if it's because I used skim milk. I had a little bit of frosting left but not so much that I would recommend making a smaller batch (for a layer cake, anyway. The buttercream recipe doesn't state when to add the vanilla and salt - I added it with the avocado. I would definitely make this again.

Really yummy! Cake was good texture and flavor, the frost recipe is a lot though, I would cut it in half the next time I use it. Use a big plantain for more flavor in the cake. For the plantain chips I used Splenda and they came out nicely! Thank God for Kitchen-aid or this would have been quite a bit of work.

I just made these cupcakes and for the amount of work I put into them, I wasn't impressed at all. The cake is okay, but the frosting is way to sweet. I could have easily cut two cups of the powdered sugar from the frosting. The cupcake itself was sort of bland, couldn't taste any plantain in it at all.

These were absolutely amazing!!! I am not a really a fan of plantains, but I thought I would give this recipe a try and I am so glad that I did. They have a wonderful flavor and the avocado buttercream is out of this world. It was nothing like I expected. I will definitely make these again.

Loved this recipe! Everyone loved them and you would never think that the frosting was made from avocado's; I highly recommend!

I made these and tried them out on family, neighbors, and co-workers. They have been a huge hit and I haven't gotten any negative comments. Not even from the finicky eaters. I highly recommend them. They are not overly sweet and I like that the cake is a little plain. None of the flavors are particularly outstanding which, I think, means they complement each other well. Everyone who has tasted them gets a different flavor profile and I wouldn't change the basic recipe at all except I agree the icing recipe makes too much.

This cupcake is to DIE for!! The cupcake was very moist and absolutely delicious! I didn't make the avocado buttercream as I am not a fan of avocados. I paired it with a brown sugar cream cheese frosting and it was a hit!!

These are delicious. Don't be fooled by the odd flavors. They taste really great. The cupcakes are moist and the frosting is rich and creamy. The recipe made about 2x as much frosting as I actually needed. I was able to cut the sugar by a cup. With the batter I added 1 tsp of banana syrup and doubled the cinnamon. I thought the batter was a tiny bit bland initially. With that it was really good. If I made this again I might use more avocado, less butter and keep the extra cup of sugar.
Overall a really tasty recipe.
