This recipe did not turn out how I expected. It ended up flavorful enough once I added cheese and bacon. I sauted the raw onion and potato in the bacon drippings to give them added flavor. The texture is the part that really bothered me. By processing the raw potatoes to that degree, the soup became somewhat sticky and gummy. I was able to disguise it with cheese but also had to add sooo much salt to get a good flavor. I will not make this recipe again. It's edible, but not what I was hoping for. In the future, I would simmer the onions and potatoes as directed, but I would dice them first and then puree in batches to get desired texture. Just want to give you a heads up on the texture...

Not at all what I hoped it would be! It was gritty and bland, except for tasting like raw potatoes! I will not be repeating this recipe. Thank goodness I didn't make this for guests-just my husband and kids.

when i made it, it was good got a lot of compliments on it. On its own, it tastes like mashed potatoes kind of but was still pretty good. When you hook it up with the bacon and cheese, that takes it to another level.

I started to make this recipe and later read the reviews. I was a bit worried about all the bad reviews it got. But the soup is a good point to start at, and then add some of your favorite ingredients and make it your own.
After reading the other reviews, I added 2 garlic cloves and celery flakes. I used my food processor to puree the potatoes and onions. The potatoes were really thick before they cooked down. I added some water and more broth. But in the end, the consistency wasn't too bad. The soup on it's own without the garnishes isn't the most flavorful. But when you garnish it with Sour Cream, Cheddar Cheese, and leftover holiday Baked Ham (substituted for the bacon, it was pretty tasty.

This recipe calls for too much onion. Reduce the onion. Add garlic. I think with some continual tweaks this could be pretty good.

This soup was the consistency of cream of wheat and was gluey because the potatoes are pureed prior to cooking.
You'd be better off boiling your potatoes or using left over baked and smashing half then add your broth and bring to a boil seasoning to taste. Add 1/2 to 3/4 cup of Half and Half (blends much better and cut the remaining potatoes into desired size chunks. Add them just prior to serving to heat through. Top as desired.

This is a fairly good recipe to make the basic potato soup. But it lacks flavor so I added a few things (i.e. 2 cloves of garlic, a half cup pepper jack cheese, allspice, and a pinch of chili powder but that's just me. Also a some chunked ham wouldn't hurt.

I have never smelled anything so bad while I was cooking before. I gave it a chance and followed through to the end and it turned out only ok. There was hardly any flavor and was gritty. No wonder the recipe calls for cheese. This is not a good recipe and will never make potato soup using this recipe again. My house still stinks!

Bad smell!
When added to simmering stock, It scorched and nearly ruined my AllClad stock pot. Threw it out before I wasted any more ingredients on it. Made stroganoff instead!
