I have made this recipe several times. The cooking time is WAY off. it takes at least an hour. i have changed the size of my bread pans and nothing i do can make this bread cook in 30 minutes. I thought my oven was messed up. The bread once it is done is very good.

I made this exactly according to the recipe, except used three smaller pans instead of two large one, butthe area inside the pans was equal measurements.
It bubbled up OVER the top and ruined the bottom of my stove AND it cooked for over 1 hour and was STILL runny in the middle. I can't imagine that using 2 pans would have made much of a difference as they were bigger and would have taken even LONGER to cook.
A big soup mess.

I modified the recipe a bit -- 1/2 cup applesauce for 1/2 of the oil. I also cut down on the water a little bit (to 1/2 cup. I should have added a bit more spice - heaping measures of the spices are a must and my muffins could have used just a bit more for my taste. this made 36 muffins, cooked for about 22 minutes at 350. They were delicious, moist, with a crisp texture on the top. I will definitely make this again.

I too filled the pans as directed and smelled something burning. I should have followed my instincts and seperated between three pans. Flavor was good but I did adjust it slightly with some other spices. I may try it again but with THREE pans.

Well first off the bread was very good. But I found some things in the instructions to be a little off. Like some other reviewers the time it takes to took is way off. I myself found it took about 30 minutes more than directed. And I even did 3 pans instead of the directed 2. And I also found the spices to be a little overpowering and strong for the bread.
But other than that, I found the bread to be ok.

I also added some raisins to the bread for moistness. It turned out excellent with the mini muffin loaf pans that I used.

The burning smell from my kitchen still exudes every time that i step into it. I filled the two loave pans as instructed and they began to overflow into my oven. The cakes then after an hour of baking were still liquid.

A cinch to make, though I have to agree with other commenters that the baking time needs to be increased--I baked a single loaf for an hour and 10 mn and the bread was perfect.

I bake quite often and wanted to try a new recipe. This was very disappointing to my entire family. VERY DRY and the spices over powered the pumpking flavor. Not a good recipte at all.
sorry
