I've never had better pumpkin bread than this! I made one loaf with chocolate chips and one with walnuts and they were both delicious. I also had to cook them longer, but they turned out great!

I hadn't baked any Pumpkin Bread in over 30 years but this recipe caught my eye. The last time I made PB I used the bake in a coffee can recipe and then promptly lost the recipe. This one sounded extremely close to what I remembered and it definitely was either better or identical.

I added chopped pecans (by eyeballing and followed the reviews for the additional baking time. The recipe is moist so even though I cooked mine an additional 20 minutes I wasn't worried I was overcooking. It was perfection!

Only thing that I would say, like many others, is that the cooking time is much longer. I think it took just over an hour. BUT THIS STUFF IS GREAT! :

i replace 1/2 the oil with 3 tbs of applesauce,
doubled the spices and sprinkled the top with pumpkin seeds....maybe next time I'll add a cream cheese icing.

No complaints here. It was easy and tastes great.

Oh, but I only had 15 ounce cans of pumpkin. It called for 16. Oh well.

This is great as it is, but you can substitute apple sauce for some of the sugar and oil and it really cuts the fat and calories. I like to put nuts on top as well for that added little bit of goodness.

I read other reviews and changed the recipe as follows: I used 1/2 white sugar & 1/2 dark brown sugar, also used heaping teaspoons of spices, I baked on 325 for 60 minutes in a convection oven (350 for regular oven. Wished I would have added raisins!!!! Eat warm with butter. Mmmmmmmmmmm
